Happy Vegan Ice Cream Day!

Hello readers! I've been away from blogging for far too long, and I've missed you. Life (read: job) has gotten very much in the way of writing, but I have lots of delicious reviews and giveaways waiting in the queue for you, so stay tuned. Today I just wanted to take this moment to wish all of you a very happy Vegan Ice Cream Day!

It was early morning when I staged, shot, and then consumed this delectable frozen dessert made with So Delicious Dairy Free Vanilla Bean Coconut Milk Ice Cream (I am, after all, a vanilla girl at heart), Edward & Sons Let's Do Sprinkelz (I mixed the chocolate and the pastel sprinkles together), and Soyatoo Whipped Topping (the kind in the box, as I can still never get more than half the contents out of the can).

Did it feel very naughty to eat an ice cream sundae for breakfast? You betcha! But since it's already 80° and Vegan Ice Cream Day comes but once a year, what the heck, right?

Now that you know it's Vegan Ice Cream Day, how will you celebrate?

There's a Vegan Ice Cream Day? Sounds like the perfect day for an impromptu ice cream party. Count me in!

Where's a spoon when you need one? It's like 97 degrees here. I'll have what you're having. That sounds (and looks) so good!

Happy Vegan Ice Cream Day! I'm making the blueberry muffin ice cream from Vegan A la Mode by Hannah Kaminsky.

WOW, Christie, that sounds SO delicious! I seriously cannot wait to get my hands on a copy of Hannah's new book. She is the diva of vegan desserts!

Vegan ice cream day already? Seems like it was just vegan pizza day. Yum, I'm excited.

♥ It's Carmen

Hey Carmen—what if everyday was a vegan food day? Imagine the possibilities—vegan pancake day, vegan lasagna day, vegan strawberry shortcake day ... :)

Hi Laura! Thanks so much for sharing the recipe! It looks super delicious, and I know it would be great made with coconut oil or vegan butter!

If you want to get all of the soyatoo out of the can, either take it out of the fridge a half hour before you want to use it, or run it under warm water until it loosens up. Also rinst the spray thingy out every now and then- totally works.

I like to be able to use it in small doses, which makes the box a little difficult. :-)

Thank you, Jodie! I agree—I would love to not have to make a whole box so that I can enjoy a little at a time. But I've tried both methods, and I still end up with half left inside the can. The good news is that I've heard that this isn't so much of a problem with the new Soyatoo Extra Creamy Whip. (I tasted it at Expo West, and it is even more delicious than regular Soyatoo!) But I have yet to find it in a store near me. I keep forgetting to ask the manager at my local Market of Choice to order it.

Yes, the best sort of day starts with a sundae for breakfast! I like the way you think, Gail. :)

Christie, I'm so thrilled that you're already diving into that book! Hope you enjoy, and I'd love to hear how it comes out.
