Vegan Frittata and Roasted Potatoes from Vegan Brunch

So far, every dish I've made from Vegan Brunch has exceeded my expectations. How does Isa do it? The tofu scramble, omelet, quiche, and frittata recipes have all done a great job of imitating the taste, texture, and mouthfeel of eggs. I can't wait to move on to the pancakes, waffles, and crepes.
